Ingredients


Makes 12.

3/4 cup (6 oz/185 g) strawberries
2 tablespoons balsamic vinegar
1/2 cup (4 fl oz/125 ml) olive oil
12 large figs
6 slices prosciutto, cut in half lengthwise
1/4 cup (2 fl oz/60 ml) brandy
Freshly ground black pepper

Instructions


  1. Preheat oven to 300 degrees F (150 degrees C).
  2. For vinaigrette: Place strawberries and vinegar in a blender. Blend until smooth. With motor running, add oil in a slow steady stream. Blend until combined, adding more vinegar if you prefer a sharper vinaigrette.
  3. Wrap a piece of prosciutto around each fig. Make a cross-shaped incision in the top of each fig and drizzle on a little brandy. Sprinkle with pepper and bake in oven for 10 minutes.
  4. Serve warm with strawberry vinaigrette.

Though the combination of figs, prosciutto, and balsamic vinegar may sound unusual, it's an absolutely inspired alliance. The sweetness of the fruit provides a subtle yet striking foil to the saltiness of the meat and the tart vinegar works to bring all the flavors together. A sprinkling of cracked black pepper brings an unexpected spark to the dish. Warming the figs briefly in the oven helps coax their rich fragrance to life.

Roasted red peppers blended with olive oil and seasoned with fresh basil make a wonderfully simple sauce for salmon. You could substitute tarragon leaves or a few sprigs of thyme for the basil if you like. Both would nicely complement the smoky sweetness of the peppers. This versatile sauce would be delicious on sautéed halibut fillets, too, or drizzled over grilled tuna steaks. Accompany the fish with a plate of sliced tomatoes seasoned with just salt and pepper and plenty of crusty bread.

Fragrant berries and crisp pastry rounds are layered with a tart blend of yogurt and cream in this stunning dessert. When shopping for berries, hold the fruit close to your nose and inhale. An intoxicating perfume is a true sign of a berry that's ripe and ready to eat.
