If returning, I would choose: Apartment/House
Why? I lived with other portuguese students and a portuguese landlady who spoke no english, I learned a lot in a very short time
Personal comments:

The cost of living in Portugal is far less than in the UK. One can have a very good time and still not spend outrageous amounts. Food, Travel, Nightlife, Overall, Telephone, Housing: was less expensive than at home.

Important to choosing this university...
I wish I had known...
A little more of portuguese...I recommend to study at least basic phrases...it's kinda hard. And to know also what Moscatel and Licor Beirao is...it's delicious In my opinion:

Go there, get used to the culture the fastest you can...pay attention to classes because it's not easy...hmm..and travel the much you can! Portugal is amazing! FINAL COMMENTS
When you travel, make sure you have a nice map. Regardings to the university, I am sure that if you are a flexible person, you will get along. People in Coimbra are very nice and people on Campus are always there to help you! Coimbra is not a big city, but it has its history and highlights, it's gorgeous! HAVE FUN!
