Duties and responsibilities related to the Sous Chef role
·Lead and supervise kitchen operations across all food service areas, ensuring consistent delivery of high-quality dishes and exceptional guest experiences.
·Manage, coach, and develop culinary colleagues, including Chef de Partie, Demi Chef de Partie, Commis Chefs, and Apprentice Chefs, to support engagement, performance, and retention.
·Maintain high standards of food quality, presentation, hygiene, food safety, and sanitation in compliance with company policies and legal requirements.
·Control food, labour, and operating costs through effective scheduling, stock management, waste reduction, and budget monitoring.
·Support recruitment, onboarding, training, and performance management activities to build a skilled and motivated culinary team.
·Ensure menus are executed to specification, using seasonal ingredients and industry trends to enhance the dining experience and drive innovation.
·Collaborate with kitchen and service teams to deliver seamless operations for restaurants, bars, events, room service, and colleague dining facilities.
·Contribute to business planning, financial performance, and continuous improvement initiatives while promoting Hyatt's values, culture of care, and guest-focused service standards.
About you
We are looking for a passionate and experienced culinary professional with previous experience in a Sous Chef or senior kitchen leadership role, preferably within a hotel, upscale restaurant, or high-volume hospitality environment. The ideal candidate will possess strong leadership and organisational skills, a thorough understanding of food safety and hygiene standards, and a proven ability to manage, develop, and motivate kitchen teams. Hotel experience is highly advantageous, along with experience managing multiple service outlets, controlling costs, and maintaining exceptional food quality standards. A creative approach to menu execution, knowledge of current culinary trends, and a commitment to delivering outstanding guest experiences are essential for success in this role.
