I feel the only way that I learned as myuch Italian as I did is because I chose to interact with locals. By the time I left I was at ease in most situations as compared to only basic knowledge when I arrived.

I understood language in Italy on a conversational level... which got me by. If I had the time I would've taken further language classes to aid, however my other classes were too time consuming.
