I had no idea the language of instruction was going to be Dutch, so be careful to have this point clarified beforehand. However, since I inteded to stay for 3 years, I would have learned it anyway (only at a slower pace). In the end it proved to be a success story: it made everything easier and more enjoyable (except studying, especially in the beginning)

Overall
I wish I had known...
I wish I had thought of Gent as an opportunity to experience something different than an Anglosaxon country (the main destinations for Greek students). Had I been less prejudiced in the beginning, I would not have spent 3 months of my life in depression.

Use all the help available from the University people (Decanaat, administration, foreing students office, etc.).
Ask for the help of locals, they are very polite and helpful.
Walk around the city a lot; it´s the only way to become familiar with it.
Fall in love: it suits the medieval atmosphere of Gent.

Deposits at independent appartments may be as high as equal to 3months rent, so be prepared. Get economy cards for trams and buses (10 trips each is OK). Organize weekly super market supplies and eat at the student homes (good prices and good quality).

There are a lot of options at various prices. Student homes are in excellent condition, yet I would recommend searching around a bit (especially if you could find a local to assist you in your search for a room or an appartment)
