Nightlife: Paradiso on Thursdays, Club 11 whenever you feel like, Meander on mondays.
Nice places for a coffee/beer: De Prins on Prinsengracht, De Jaren close to Muntplein, the open-air caffe behind Westerkerk, etc...

Don't miss the Kriterion just in front of the faculty of economics, it's a great pub/cinema.
The greatest pub in the world: the Gollem.
Discos: Paradiso, Panama, etc.

Rembrandtplein was a square full with bars and night clubs, really nice atmosphere. The museums are free with a year pass in the whole country. Jordan neighboordhood full with original stores.

The problem in Amsterdam is we're "stuck" in the small international student community since almost none of us speaks Dutch. So, we all do everything together, it is great, but there aren't a lot of mixing with the locals.

Look out for cheap eats at Squat houses. And be aware of all the various schedules floating around cafes - there are always special events at all of the museums!
